This is something of a psychological thriller...aboard a large spaceship.

Nightflyers is an American science fiction television series on Syfy that premiered on December 2, 2018, based on the novella and series of short stories of the same name by George R. R. Martin. The series is set to consist of ten episodes.

Premise
In 2093, a team of scientists embarks on a journey into space aboard an advanced ship called the Nightflyer to make first contact with alien life-forms. However, when terrifying and violent events occur, the team begins to question each other and to realize there is something on-board the Nightflyer with them.

Are there any modern films or TV series that portray AI in a mundane way? Things that go for story and verisimilitude, but which also include cool tech. I need new stuff to watch and get excited about, but I end up lumping every trailer into a familiar, this concept feels "tired", category.

I would say no but as those moguls in Hollywood would say, "Where's the fun in that?" That simply doesn't sell movies and popcorn.

For much the same reason that people slow down when there's a traffic accident along the roadside or why the clamor for Halloween or Horror shows or the Twilight Zone. It is the embedded fear of the unknown that stirs or scares the life in us or out of us as the case might be.

The last friendly AI might have been Wall-E or Short Circuit or Chappie but most AI's, no matter how well-intentioned, usually are or soon become used by a crazed individual or become the property of some government, hell-bent on destruction or chasing away those well-meaning aliens.

I feel your anguish and frustration but such is the media that sells tickets.

I have only seen the first episode of the Nightflyers series so far.  My impression is that the AI does not seem to play much of a major role, the focus is more on the human crew, who all appear to lack discipline.  In a real world situation where a major issue arises that impacts a nation or humanity, its usually the military who would undertake missions, and I can only speak for the British military that has a strong sense of discipline and structure, so you would not see the sort of chaos and lack of discipline as I witnessed with the crew of Nightflyer in the first episode.

Lack of discipline? I would think it a bit difficult to maintain clean underwear and a stiff upper lip when "alien beings" on board are snatching and dispatching part of your crew and you may be next.  Then again, we haven't faced such anomalies, have we? ;)
