Mardi Gras Crawfish Cornbread

It’s Mardi Gras time, and so it’s time for crawfish.

2 cups yellow cornmeal
1 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon Creole or Cajun seasoning
6 eggs
2/3 cup vegetable oil
1 yellow onion, finely diced
8 ounces cheddar cheese, grated
1 (12-ounce) bag frozen corn, thawed
2 pounds crawfish tail meat, finely chopped
1 (4-ounce) can diced jalapenos

Preheat the oven to 350 degrees F. Grease a 9x13-inch baking dish.

Stir the cornmeal, baking powder, salt and creole seasoning together in a very large bowl. Stir in the eggs and oil and mix thoroughly. Add the onion, cheese, corn, crawfish and jalapenos and stir until everything is completely mixed together and evenly distributed.

Spread the cornbread into the prepared pan, smoothing out the surface. Bake for 45 – 50 minutes until golden and firm and a tester comes out clean. Let rest for about 10 minutes before slicing and serving warm.

One could also substitute shrimp instead of crawfish (in case they are not available where you live).

My microwave, and too powerful, and it goes very quickly, I try with 350 °, but it's too hard. So I lowered the oven, and I managed !!! last night !! I eat a delight! Very rich in calories, "Attention to cholesterol" :o :)

One shouldn't microwave shrimp. They should be heated in a saucepan with a drizzle of Olive Oil (or preferred cooking oil) and a small pat of butter (for flavor). The oil helps keep the butter from burning.
Only heat then for a short time. If they are Microwaved or cooked for more than several minutes, they will become rubbery and chewy.

I usually steam my shrimp with some Old Bay seasoning dusted over them, beer and vinegar mixture in the bottom of the steamer. For raw, deveined shrimp, about 7 - 8 minutes (depending on size). They should be reddish looking when done.

Once cooked and you wish to reheat them, say a day or two later, use the method in the first sentence.

FYI - A Crawfish is pretty much of a "cousin" to the shrimp. Their taste is similar and their recipes, for the most part, can be substituted.

HOMEMADE CRAWFISH BREAD RECIPE
HOMEMADE CRAWFISH BREAD
INGREDIENTS
2 pound crawfish tail meat, peeled, cleaned and deveined
1/2 stick butter
1 clove garlic, minced
3/4 cup chopped and drained ripe tomatoes
2 tablespoon Cajun seasoning
3/4 cup Monterey Jack Cheese
1/4 cup grated Parmesan
1/2 cup mayonnaise
3 tablespoons chopped fresh parsley
1 loaf French bread
DIRECTIONS
Preheat the oven to 350 degrees F.
In a large skillet, melt the butter over medium heat. Add the garlic and cook for a few minutes. Add the tomatoes, Cajun seasoning and crawfish. Saute for 1 minute. Remove from the heat.
In a bowl, mix together the cheeses, mayonnaise and parsley. Add the tomato and crawfish mixture to the mayo mixture.
Cut the loaf of bread in half and then cut the bread lengthwise. Spoon the mixture on the bread and bake for 10 to 15 minutes. Then broil for an additional 3 to 5 minutes. Watch closely, as not to burn. Cut the bread into individual portions. Recipe adapted from Good Eats   :P :P ;) :)
