Quick Italian Cream Cake Recipe
1 package white cake mix with pudding
3 large eggs
1 1/4 cups buttermilk
1/4 cup vegetable oil
1 (3 1/2-ounce) can flaked coconut
2/3 cup chopped pecans, toasted
3 T Rum (optional)
Cream Cheese Frosting (below)
Preparation

Beat first 4 ingredients at medium speed with an electric mixer 2 minutes. Stir in coconut and pecans. Pour into 3 greased and floured 9-inch round cakepans.
Bake at 350° for 15 to 17 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. Remove from pans, and cool completely on wire racks.
Sprinkle each cake layer evenly with rum, if desired; let stand 10 minutes.
Spread Cream Cheese Frosting between layers and on top and sides of cake. Chill 2 hours before slicing.
Cream Cheese Frosting

Ingredients

1 (8-ounce) package cream cheese, softened
1/2 cup butter or margarine, softened
1 (16-ounce) package powdered sugar
2 teaspoons vanilla extract
1 cup chopped pecans, toasted
Preparation

Beat cream cheese and butter at medium speed with an electric mixer until smooth. Gradually add powdered sugar, beating until light and fluffy. Stir in vanilla and pecans. Frost cake when completely cooled.

Barbara Recipe (Soup)
Zuppa Toscana (better than Olive Garden!)

1 lb. Italian sausages (use spicy to get that signature Olive Garden flavor)
4-6 russet potatoes, chopped
1 onion, chopped
1/4 c. REAL bacon pieces (optional)
2 Tbsp minced garlic (about 3-4 cloves)
32 oz. chicken broth
1 c. kale or Swiss chard, chopped
1 c. heavy whipping cream
2 Tbsp flour

1. Brown sausage links in a sauté pan.
2. Cut links in half lengthwise, then cut slices.
3. Place sausage, chicken broth, garlic, potatoes and onion in slow cooker. Add just enough water to cover the vegetables and meat.
4. Cook on high 3-4 hours (low 5-6 hours) until potatoes are soft.

30 minutes before serving:
5. Mix flour into cream removing lumps.
6. Add cream, kale, and bacon to the crock pot, stir.
7. Cook on high 30 minutes or until broth thickens slightly.
8. Add salt, pepper, and cayenne to taste.

Southern Strawberry Punch Bowl Cake
WOW

1 yellow cake mix
1 (6 oz.) pkg. instant vanilla pudding
1 lg. can crushed pineapple, drained
2 (10 oz.) pkgs. frozen strawberries
2 bananas
1 (16 oz.) carton Cool Whip

Bake cake in two round cake pans and set aside to cool. Make pudding and set in refrigerator to get cold. Cut one layer of cake in small chunks; put in punch bowl. Spread half of pudding on top; then add half of pineapple and one package strawberries. Slice one banana on top; half of Cool Whip, spreading to cover completely. Repeat with the other layer the same - ending with Cool Whip. Let set in refrigerator overnight.

MY EASY CHOCOLATE PEANUT BUTTER BALLS--A FAMILY FAVORITE that is requested by Everyone!!

Ingredients:
18oz Peanut Butter Jar
¼ Cup Butter
2 Cups Powdered Sugar
½ teaspoon Vanilla Extract
12 oz bag of Nestle’s Semi- Sweet Morsels

1. Mix the peanut butter, butter, vanilla extract and powdered sugar in a bowl. Stir until combined.
2. Shape into approximately 1-inch balls and place on baking pan. Put in Freezer for about 20 minutes.
3. Melt Nestle’s Semi- Sweet Morsels according to Pkg ( I Microwaved )
4. Dip peanut butter balls into chocolate w/ toothpick letting the excess coating drip off. return the chocolate coated peanut butter balls back pan until chocolate is firm.
5. Store in a Ziploc bag in the refrigerator.

This ABSOLUTELY is the BEST SOUP I've ever eaten!!
We just fixed a large pot of it this week for the first time.
My wife got the recipe from her friend at work.
We used Botto's Italian Sweet and Italian Hot Sausage (4 links of each).
The links were split then diced into small 1/2" + or - pieces.
We cooked with Kale. Diced the potatoes into 1/2" cubes.
The bacon was omitted as was the Cayenne (since we already had Hot sausage).

The result was simply fantastic! To any soup lovers, try this...it will become your favorite as well!

Art, I love a good soup, especially in the winter !! But! other way to eat soup, summer, Greek soup, she eats it cold with a lot of mixing, vegetable, 5 spice, and tapioca, serve cold in summer. As many calories, a tomato juice or carrot. :) O0

Barbara Recipe
Slow Cooker Pork Tenderloin

2 pound Pork Tenderloin
1/4 cup low sodium soy sauce
1 TBS Yellow Mustard
2-3 TBS maple syrup
2 TBS olive oil
2 TBS Diced dried onions
1 1/2 TSP Garlic Salt or Powder
Mix ingredients above. Pour over Tenderloin in the crock pot and cook on low for 6 hours.

KIM CHEE BEEF

Ingredients


5 to 6 lbs. chuck roast, or round steak, cut into bite size cubes
1/2 lb ( two sticks) salted Butter
1 large clove Garlic, minced
1 large sweet Onion, sliced
3 jars hot Kim chee


Cooking Instructions


Add beef to huge damn pot together with the onions, garlic and butter. When beef turns brown, drain any fat. add the kim chee and simmer till beef is tender,about 15 to 20 minutes. Salt to taste.

You can also use 6 lbs. boneless, skinless chicken breasts in place of beef.

Dis kine good served over hot sticky rice, don't forget the chili pepper water!

Mardi Gras Crawfish Cornbread

It’s Mardi Gras time, and so it’s time for crawfish.

2 cups yellow cornmeal
1 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon Creole or Cajun seasoning
6 eggs
2/3 cup vegetable oil
1 yellow onion, finely diced
8 ounces cheddar cheese, grated
1 (12-ounce) bag frozen corn, thawed
2 pounds crawfish tail meat, finely chopped
1 (4-ounce) can diced jalapenos

Preheat the oven to 350 degrees F. Grease a 9x13-inch baking dish.

Stir the cornmeal, baking powder, salt and creole seasoning together in a very large bowl. Stir in the eggs and oil and mix thoroughly. Add the onion, cheese, corn, crawfish and jalapenos and stir until everything is completely mixed together and evenly distributed.

Spread the cornbread into the prepared pan, smoothing out the surface. Bake for 45 – 50 minutes until golden and firm and a tester comes out clean. Let rest for about 10 minutes before slicing and serving warm.

My microwave, and too powerful, and it goes very quickly, I try with 350 °, but it's too hard. So I lowered the oven, and I managed !!! last night !! I eat a delight! Very rich in calories, "Attention to cholesterol" :o :)

One shouldn't microwave shrimp. They should be heated in a saucepan with a drizzle of Olive Oil (or preferred cooking oil) and a small pat of butter (for flavor). The oil helps keep the butter from burning.
Only heat then for a short time. If they are Microwaved or cooked for more than several minutes, they will become rubbery and chewy.

I usually steam my shrimp with some Old Bay seasoning dusted over them, beer and vinegar mixture in the bottom of the steamer. For raw, deveined shrimp, about 7 - 8 minutes (depending on size). They should be reddish looking when done.

Once cooked and you wish to reheat them, say a day or two later, use the method in the first sentence.

FYI - A Crawfish is pretty much of a "cousin" to the shrimp. Their taste is similar and their recipes, for the most part, can be substituted.

INGREDIENTS
2 pound crawfish tail meat, peeled, cleaned and deveined
1/2 stick butter
1 clove garlic, minced
3/4 cup chopped and drained ripe tomatoes
2 tablespoon Cajun seasoning
3/4 cup Monterey Jack Cheese
1/4 cup grated Parmesan
1/2 cup mayonnaise
3 tablespoons chopped fresh parsley
1 loaf French bread
DIRECTIONS
Preheat the oven to 350 degrees F.
In a large skillet, melt the butter over medium heat. Add the garlic and cook for a few minutes. Add the tomatoes, Cajun seasoning and crawfish. Saute for 1 minute. Remove from the heat.
In a bowl, mix together the cheeses, mayonnaise and parsley. Add the tomato and crawfish mixture to the mayo mixture.
Cut the loaf of bread in half and then cut the bread lengthwise. Spoon the mixture on the bread and bake for 10 to 15 minutes. Then broil for an additional 3 to 5 minutes. Watch closely, as not to burn. Cut the bread into individual portions. Recipe adapted from Good Eats   :P :P ;) :)

My wife is Italian (100%)!! Oh yeah!! She learned from her mother and her grandmother!
We also grow all our own produce! As fresh as it gets!! O0

• 500 g potatoes
• 2 eggs
• 1 box of tuna in oil (190 g)
• 1 onion
• ½ green pepper
• ½ red pepper
• 15 cl whole milk
• 50g salted butter
• 20 g grated Parmesan cheese
• 10 cl cream
• 8 sprigs of parsley
• 1 pinch nutmeg
• salt and pepper
• Coarse salt

Steps preparation
1 Wash the potatoes. Bake 25 minutes in a pot of boiling water.
2 Whip two eggs in a pot of boiling water and cook 10 minutes, then cool under cold water and Shuck them.
3 Peel the onion and chop coarsely. Wash, remove seeds and slice the peppers into very small pieces. Wash, dry and chop the parsley.
4 Drain the potatoes, peel them and put them through the ricer. Heat the milk in a small saucepan.
5 Put the puree in a saucepan, pour the milk into the net, then add the butter in pieces salt and pepper, sprinkle with nutmeg and mix.
6 Drain and flake tuna. Roughly chop the eggs and mix them with tuna, onions, peppers, parsley and pepper.
7 Preheat the oven. 6 (180 ° C).
8 Put half of the puree in small glasses and tuna mixture. Top with remaining sauce. Add grated parmesan cream and liquid net.
9 Bake for 15 to 20 minutes, the top should be golden. Use the output of the furnace.

CONNIE'S DANISH HEIRLOOM LAYER CAKE
So Light and moist ~ Not Too Sweet ~Perfect after a heavy meal!!
This recipe is so different from any cake you have ever tasted!! Give it a try....I know you will love it!!

You can Freeze the layers easily and have a picture perfect cake ready at the drop of a hat!

Ingredients:
1/2 cup vanilla yogurt
1/2 cup sour cream
1 cup of sugar
pinch salt
1 egg
1/2 tsp. baking soda
1 tsp. baking powder
1 + 1/2 cups flour
1 tsp. vanilla
1 pint whipping cream - whipped and sweetened with 1 Tbsp. icing sugar
1 - 2 pounds sliced slightly sweetened strawberries - or fruit of choice

Directions:
In a medium bowl, mix together with a whisk or wooden spoon, yogurt, sugar, sour cream, egg, salt, baking soda, baking powder. Add flour and vanilla.
Grease or spray 3 - 9" layer pans and divide batter evenly between pans. (the batter will seem skimpy....but spread as evenly as you can with a spatula in each pan - layers will rise on baking).
Bake at 350 oven (325 if using Convection oven 325 oven) Bake for only 10 - 12 minutes....till Very Light Brown. Cool on racks...and remove from pans with a plastic spatula onto racks to finish cooling as soon as you can handle the cakes.

IMPORTANT: Do NOT over bake!! If not using immediately - put wax paper between layers, cover with plastic and refrigerate or freeze till ready to assemble cake.
Layer cake layers: 1/3 sweetened whipped cream and 1/2 sweetened sliced strawberries, or fruit of choice - then 1/3 sweetened whipped cream and 1/2 berries. Last layer - just sweetened whipped cream. Decorate with berries.
This cake tastes even better the next day and the day after that....if there is any left!! The Trick is Not to Over bake the layers...or it will be dry and not nice and moist.
This will soon become Your Favorite Family Cake too!!

Melt Butter, Parmesan, Garlic Powder, Salt and Pepper in a baking dish. Halve the Potatoes and place them cut side down IN the butter. Bake for 45 at 400!... they come out with an AMAZING crust!!

~~ 7 UP BISCUITS ~~

INGREDIENTS:
4 cups Bisquick
1 cup sour cream
1 cup 7-up
1/2 cup melted butter

DIRECTIONS:
Mix Bisquick, sour cream and 7 up. Dough will be very soft - don't worry. Knead and fold dough until well mixed. Pat dough out and cut biscuits using a round biscuit / cookie cutter. Melt butter in bottom of cookie sheet pan or 9x13 casserole dish. Place biscuits on top of melted butter and bake @ 425 degrees for 12-15 minutes or until brown.

If you love baking, the lack of a conventional oven in a Japanese apartment can be frustrating. But all is not lost! Many sweet treats can be made at home in your rice cooker. This recipe for banana bread is simple and only takes about an hour and a half.

INGREDIENTS:

1 1/2 cups enriched white flour
3/4 cups white sugar
2 tsp. baking powder
1/2 tsp. baking soda*
1/2 tsp. salt
1 cup mashed ripe bananas (2 to 3 medium to large bananas)
1/3 cups softened butter
1/4 cups milk
1 egg
Cooking oil
* Baking soda may not be available everywhere in Japan. If you can’t find it, don’t worry; extra baking powder can be added as a substitute without a noticeable difference. I’ve found that an extra teaspoon of baking powder works well in this case.

For extra sweetness, substitute a portion of white sugar for an equal amount of packed brown sugar. Or, add 1/2 tsp. of vanilla extract along with the wet ingredients.

DIRECTIONS:

In a large mixing bowl, combine the flour, sugar, baking powder, baking soda and salt. Whisk until the ingredients are well mixed.
Next, add the bananas, butter, milk, and egg. These should be mixed until the batter has a uniform and thick, creamy consistency. If you own an electric mixer, let it do the work (low setting recommended). If not, the bananas and butter may give you some difficulty when hand-mixing it. To make things easier, make sure you let the butter soften long enough beforehand. Also, if you put the bananas into a plastic freezer bag, you can make sure they’re well-mashed without making a huge mess.
At this point, you can stir in any other ingredient you may want, like chopped nuts or a bit of dried fruit. Feel free to try out your own variations on the recipe!
Before pouring the batter into the rice cooker’s pot, remember the most important step! Coat the inside of the pot lightly with cooking oil. Paper towels help to spread it properly. Otherwise, the banana bread will stick to the inside as it cooks.
Now simply pour the batter evenly into the pot and start the cooker. I use the same settings as when I make rice. On my rice cooker, the bread isn’t done after just one cycle, so I let it run twice, though this could vary based on your rice cooker. With mine, I have to allow the cooker to cool down for a few minutes in between cycles, as it won’t start again right away.
That’s it! After it’s done, pop the bread out onto a serving tray or plate and enjoy!
