Anyonre discovered any good recipes during lockdown?

I find mashed avocado on toast with a sprinkling of seasoning tastes great and sets you up for the day.
Oh and I discovered using plain flour in a bread machine instead of bread flour makes a rock hard, unedable (but great smelling) lump of crap.

For the curious indulger:

Here's my best recipe:
Open freezer door, stick in frozen fries and nuggets, wait 30 mins, prepare table.
Pull out root beer soda.
Salt.
Done!
And they taste better than most food. So in my opinion I recommend them. Couldn't bother with carrots or oils is you payed me.

Breakfast:
shove in 2 waffles into toaster, pull out 1 minute maid, think about woman eating eat with me

Desert for both my meals:
Chewy chip ahoy cookies with 1 whole jug of milk

And that's all I eat and drink every day. Been "like" this for years age 10 - 24 now.

I didn't have a lot in the kitchen a couple of weeks back so I came up with something with what I had.

Ingredients:

- Half an onion diced
- 2 eggs, whisked up as if you are making scrambled egg
- A few mushrooms chopped up
- Couple of fresh tomatoes chopped up
- 2-3 bacon medallions or normal bacon if you don't mind the rind, sliced into smaller pieces, I cut mine into squares with scissors

How to - I used a single saucepan on medium to high heat:

- Soften onions for a few minutes in oil
- Throw in the bacon bits and cook them until they lose the raw look
- Throw in the mushrooms and tomatoes and cook it all until the mushrooms are soft
- Get a couple of rounds of toast going
- Finally get the whisked eggs and put that in too and stir until it's like the consistency of scrambled eggs

By the time the eggs are done so should your toast be ready.

Butter the toast and dish out the contents onto it. Maybe squirt some tomato ketchup over it.

And there you go. I suppose it's a bit like omelette, I had it for tea, but it would be a good breakfast too.  ^-^

A great little brunch/lunch

1- can Tuna fish (we like chunk white in water, not oil)
a dollop of mayo, half a teaspoon of sweet pickle relish, and dust of salt and pepper. Mix well.

Get an English muffin, split in half edgewise just like a bagel.

Spoon some tuna onto both halves.

Place a square or your favorite cheese like swiss or cheddar,

Place them (both halves) into a toaster oven until the cheese starts to get nice and melty.

Remove and enjoy with some potato chips or fries and your favorite beverage. Your almost classic Tuna Melt.

The wife and I each enjoy one half and it makes for a nice, not too heavy late morning brunch meal! You can opt for either dill or sweet pickle to compliment it.

Hmm, well, I have my own personal chef here and she's a genius with the local cuisine. I don't even know the names of some of the spices and vegetables that she uses, let alone how to make those exquisite dishes. Fresh seafood, chicken, and pork are all cheap and plentiful.

However on her days off I love hot rice fresh from the rice cooker, seasoned with pepper, garlic, and soy sauce, and garnished with spicy sardines which are also caught and bottled locally.
